Fontina Valle d'Aosta is a wonderful cow's milk cheese made in the 6,500-foot-high Alpine pastures of Italy. This semi-firm cooked and pressed cheese is washed in the Italian caves to develop its signature aroma and keep the paste plump. The uniquely rich and nutty flavor is reminiscent of truffles, with a subtle fruity, grassy aroma and supple texture. Perfectly pairs with Pinot Grigio, Merlot, or Lager style beer.
